Can i catch herpes while shes not having an outbreak?

My girlfriend caught herpes from her cheating ex. It didnt put me off her cuz i really like her and shes so kind and nice and such a good person. We started off using condoms and being very higenic amd washing hands alot. But now shes asking me to stop using a condom. She insists theres no chance of me catching it while she isnt having an outbreak. Ive done it without a condom 3 times so far and so far i dont think ive caught it but im very uncomfortable with the risk if there is one but wen i try and tell her she gets upset asif ive just told her she is a freak or something. How do i tell her i am uncomfortable with unprotected sex without offending her?
